I got the follow-up call from Mayo this afternoon. All of the labwork they did looked good. They checked out my liver function, did some autoimmune testing and other basic labs. 
The MRCP was not normal. My pancreas, thankfully, appears healthy and has recovered well from the multiple pancreatitis episodes. My pancreatic duct is not working as it should. It is emptying much slower than expected. My biliary tract is also dilated with some air present. Their suspicions are that the multiple ERCPs and stents I have had have caused sclerosing/scarring of those ducts. Only time will tell if my body can heal these areas. An emphasis was made on an extremely healthy diet, high in antioxidants. An easy treatment for me to follow in hopes of getting better! 
As long as I don't have any new pancreatitis episodes, I will return to Mayo in about 8 weeks for an Endoscopic Ultrasound (EUS). They will be able to get a very clear view of my pancreas specifically to rule out signs of chronic pancreatitis and smaller areas of tissue damage. Please send all of your thoughts that I can stay healthy and get that ultrasound done!
