I second all the things that Rachel said, plus you can add protein powder to smoothies to boost protein - quick and easy. If looking for a meat option, consider tuna that is seasoned and in pouches (not cans). The pouches are single serving, have a variety of flavors, can be tossed on a salad or in a sandwich.

Glad to hear Ted is regaining strength! Regarding food prep… my partner (Greg) and I eat a 100% plant-based diet in our house (and Greg is a high-energy muscular guy who works out all the time). Things we always have on hand: canned beans, nuts and seeds, peanut and other nut butters, quinoa, and whole grains and lots of greens and veggies. We simple rinse and drain the beans and add them to our salads. I cook a large batch of quinoa (takes about 15 mins) and we use it during the week. The book “The China Study” revealed that Americans are obsessed with protein and we get far more than we actually need. I personally have never known anyone to have a protein deficiency but have known many with heart disease, high blood pressure, high cholesterol, etc. Greg loves making vegetarian chili in the crockpot/slow cooker and eating it for days.
